Corn Casserole Recipe + Giveaway! (CLOSED)

One of my favorite Thanksgiving side dishes is corn casserole, so I thought it was only fitting that that be the recipe that I share with you all today. The roasted cauliflower and baked spiced squash look especially good to me.

The recipe I used called for butter, but I swapped that out for Country Crock (0g trans fat!). It's a great alternative!

Corn Casserole Recipe

1 (15 3/4 oz.) can of whole kernel corn, drained
1 (14 3/4 oz.) can of cream style corn
1 (8.5 oz.) package of Jiffy corn muffin mix
1 cup sour cream
1/2 cup of Country Crock, melted
1-1.5 cups of shredded cheddar (I used mild!)
* I didn't add sliced jalapenos this time, but my mom usually adds them when she makes this. It's really, really good that way! And I would totally suggest throwing some in if you like jalapenos. Do it.

Preheat your oven to 350 degrees.

Stir the corn, muffin mix, sour cream, and melted Country Crock all together in a large bowl. Once you've got it all mixed together, pour into a 9x13 greased (I used my Country Crock for this part, too!) casserole dish. Bake for 45 minutes.
Take it out of the oven and top with your shredded cheddar. Now, put it back in the oven for about 5 minutes, or until your cheese has melted.

Let it cool a bit. Eat it. Thank me later.

I love this recipe! Not only does it taste great, but it's also so easy and really quick to make. You only have about 5-8 minutes of actual working time. So, if you've been asked to bring a dish to your family dinner, but you're super busy and in a time crunch...I'd say this one's for you!

    As for me, I'm so excited to eat my mom's million dollar dessert after Thanksgiving dinner, this year (and every year) :)

    My favorite side dish at Thanksgiving is mashed potatoes. For as long as I can remember I would just sit at the table and dip everything in my mashed potatoes. Oh wait. Or stuffing. Home made stuffing is super yummy too...

    The worst thing I ever had at Thanksgiving was "Mustard Custard" my grandpa made. It was in a jello mold. Disgusting! :)

  6. My favorite used to be scalloped potatoes, before I became vegan ... now I love brussels sprouts, anything with potatoes or STUFFING! You don't have to have a turkey to have stuffing!

    My favorite thanksgiving dish it's either green bean casserole, or stuffed sweet potatoes. I can't choose. I could really make a full meal out of either of them!

  12. i am so glad that you shared this recipe and how it actually is! i saw the recipe on pinterest and thought it sounded good and so i was planning on making it for our thankgiving food day at work this friday, and no for sure i'm going to make it since i have someone legit telling me it's good! haha i pretty much love everything at thankgiving but have never been brave enough to use the cranberry sauce. that shall change this year! cheers!! tarynschettler@gmail.com
